Zoodles & ‘Za

My friend, and soon-to-be bridesmaid, love cooking and doing crafty things together. A couple of Sundays ago, before our ritualized GIRLS viewing, we decided to make some Keto/Paleo friendly zucchini noodles (zoodles!) and pizza. It was a delicious meal  that had minimal cards– making our taste buds and out waist lines happy!

We started by making the zoodles. Basically, we just shredded the zucchini (which naturally becomes stringy when peeled with a veggie peeler), and sauteed it with coconut oil (butter was used in some batches) and seasoned to taste.

We then made a creamy “Alfredo” sauce. This used heavy cream, butter, garlic powder, and salt and pepper to taste. Once the sauce was ready, we added the zoodles (after saving a bit for the pizzas) and let it simmer for a while. That’s it! Delicious!

Next, We started the pizza “dough.” It mostly consisted of cheese.

We formed the “dough” into pizza shapes and baked for about 15 minutes. Then, we added sauce. One had tomato and one had the extra cream sauce. We baked until the cheese was melted. Unfortunately, we forgot to grease the cookie sheet before baking, so it was very difficult to remove them… but they tasted yummy!
