Last weekend was full of fun, healthy cooking with gal pals.
First, I got to spend some time with a couple of gals near and dear to my heart. We studied abroad in Italy together. There is no bond like the one that is made while traveling! We decided to (appropriately) cook an Italian meal together and drink some wine.
Since I am on a restrictive diet, and the other girls are sweethearts, we used spaghetti squash instead of normal pasta. Then, we made a delicious chicken putanesca dish. The end result was delicious, even without noodles!
The next day, I was able to re-heat some spaghetti squash with butter and garlic salt. It was a nice, simple lunch that helped satisfy my craving for pasta!
